Easy Sandwich Bread
A soft, simple white loaf baked in a tin for sandwiches and toast, with no special equipment.

Ingredients
- 500g (about 3 1/3 cups) Bread flour (or plain flour), plus extra for dusting
- 7g (1 sachet) Dried instant yeast
- 1 tbsp Sugar
- 1 1/2 tsp Salt
- 310ml Warm water, lukewarm, not hot
- 30g Butter, softened, plus extra for greasing
You’ll need: 22 x 12cm loaf tin, Large bowl, Wire rack
Method
Mix the flour, yeast, sugar and salt in a large bowl. Add the water and butter and stir to a rough dough.
Knead on a lightly floured bench for 10 minutes (or 6–8 minutes in a stand mixer with a dough hook) until smooth and stretchy. Place in a lightly oiled bowl, cover and leave in a warm spot for 1 hour, until doubled in size.
Grease a 22 x 12cm loaf tin. Punch down the dough, shape it into a rectangle and roll up tightly from the short end. Place seam side down in the tin.
Cover and leave for about 40 minutes, until the dough rises about 2.5cm above the rim of the tin. Heat the oven to 200°C (180°C fan) in the last 15 minutes.
Bake for 30–35 minutes, until deep golden and the loaf sounds hollow when tapped on the base. Turn out of the tin straight away.
Cool on a wire rack for at least 30 minutes before slicing.
Storage
Keeps in a bread bag at room temperature up to 3 days. Slice and freeze up to 3 months; toast straight from frozen.
