Ingredients
- 400g Pumpkin, peeled, cut into 3cm pieces
- 2 Carrots, peeled, cut into 2cm chunks
- 1 Red onion, cut into wedges
- 1 Zucchini, cut into 3cm chunks
- 1 Capsicum, cut into 3cm pieces
- 2 tbsp Olive oil
- 1 tsp Salt
- Black pepper, to taste
You’ll need: Large baking tray
Method
Heat the oven to 200°C fan (220°C conventional). Line a large baking tray with baking paper.
Toss the pumpkin, carrots and onion with half the oil, half the salt and some pepper. Spread over the tray and roast for 15 minutes.
Toss the zucchini and capsicum with the remaining oil and salt. Add to the tray and stir everything together.
Roast for another 20–25 minutes, until all the vegetables are tender and golden at the edges.
Serve hot or warm.
Storage
Fridge up to 3 days. Reheat in the oven or microwave until piping hot.
