- 500g Pork mince
- ½ cup Breadcrumbs
- 1 Egg
- 1 small Onion, finely grated
- 2 cloves Garlic, finely chopped
- 1 tsp Dried mixed herbs
- 1 tbsp Olive oil
- 200ml Cream
- 100ml Chicken stock
- 1 tbsp Wholegrain mustard
- Salt and black pepper
You’ll need: Large baking tray, Saucepan
Method
Heat the oven to 200°C (180°C fan) and line a large tray with baking paper.
Mix the mince, breadcrumbs, egg, onion, garlic, herbs, 1 tsp salt and pepper with your hands. Roll into about 20 balls, place on the tray and drizzle with the oil.
Bake for 18–20 minutes until browned and cooked through with no pink inside.
Meanwhile, simmer the cream, stock and mustard in a saucepan for 5 minutes until slightly thickened. Add the meatballs and turn to coat. Serve with mash, pasta or steamed vegetables.
Storage
Fridge up to 2 days, or freeze the baked meatballs without sauce up to 3 months. Reheat until piping hot all the way through.
