Slow Cooker Pork and Apple

- 1kg Boneless pork shoulder, fully thawed, cut into 4cm cubes
- 2 Onions, sliced
- 2 cloves Garlic, crushed
- 2 Apples, firm, cored and cut into thick wedges
- ½ cup (125ml) Apple juice
- ¼ cup (60ml) Chicken stock
- 1 tbsp Wholegrain mustard
- 1 tsp Dried thyme
- 1 tbsp Cornflour
- 2 tbsp Water
- Salt and pepper, to taste

Method
Put the onions and garlic in the slow cooker and add the pork. Mix the apple juice, stock, mustard, thyme, salt and pepper and pour over, stirring to coat.
Cover and cook on low for 5 hours or on high for 3 hours.
Stir in the apple wedges, cover and cook for 1 hour more on low or 45 minutes on high, until the pork is very tender and the apple is soft but still holding its shape.
Mix the cornflour and water until smooth, stir into the sauce, cover and cook on high for 10 minutes, until slightly thickened. Taste and season.
Serve with mashed potato or crusty bread and steamed greens.
Storage
Cool within 2 hours; don't leave it sitting in the slow cooker to cool. Keeps in the fridge up to 2 days; reheat until piping hot all the way through. Freezes up to 3 months, although the apple will be softer.
