- 1 cup (150g) Self-raising flour
- 2 tbsp Caster sugar
- 1 Egg
- 3/4 cup (180ml) Milk
- 30g Butter, 10g melted for the batter, the rest for the pan
You’ll need: Non-stick frying pan, Mixing bowl
Method
Whisk the flour and sugar in a bowl. Add the egg, milk and 10g melted butter and whisk until just smooth (a few small lumps are fine).
Heat a large non-stick frying pan over medium heat and rub with a little butter.
Drop level tablespoons of batter into the pan, leaving space between them. Cook for 1 to 2 minutes, until bubbles appear on top and the underside is golden.
Flip and cook for 1 minute more. Keep warm under a tea towel and repeat, buttering the pan between batches. Makes about 16. Serve with jam and cream or butter.
Storage
Best eaten warm. Keep in an airtight container at room temperature for 1 day, or refrigerate for up to 3 days.
