Ingredients
- 1kg Potatoes, floury (such as Sebago or Desiree), peeled, cut into 4cm chunks
- 1 tsp Salt, for the water, plus extra to taste
- 50g Butter
- 100ml Milk, warmed
- Black pepper, to taste
You’ll need: Potato masher
Method
Put the potatoes in a large saucepan, cover with cold water and add 1 tsp salt. Bring to the boil, then simmer for 15–20 minutes, until a knife slides in with no resistance.
Drain well and return the potatoes to the hot pot for 2 minutes to steam dry. Dry potatoes make fluffy mash.
Warm the milk and butter in a small saucepan or the microwave until the butter melts.
Mash the potatoes with a potato masher until smooth, then stir in the warm milk and butter. Season with salt and pepper.
Serve straight away.
Storage
Fridge up to 3 days. Reheat with a splash of milk until piping hot all the way through.
