Easy Garlic Butter Rice
Rice toasted in garlic butter and cooked in stock, finished with parsley.

- 2 tbsp Butter
- 3 cloves Garlic, finely chopped
- 1½ cups Long-grain white rice, about 300g, rinsed and very well drained
- 2¼ cups Vegetable stock, 560ml, hot
- 2 tbsp Fresh parsley, chopped
- Black pepper, to taste
You’ll need: Medium saucepan with lid
Method
Melt the butter in a medium saucepan with a lid over medium heat. Add the garlic and cook for 30 seconds, until fragrant. Do not let it brown.
Add the drained rice and stir for 1 minute, until coated in the butter.
Pour in the hot stock and bring to the boil. Stir once, turn the heat to its lowest setting, cover and cook for 12 minutes without lifting the lid.
Take off the heat and leave covered for 10 minutes.
Fluff with a fork, fold through the parsley and season with pepper.
Storage
Cool quickly and chill within 1 hour. Keep in the fridge and eat within 1 day. Reheat once, until piping hot all the way through.
