Easy Garlic Butter Fish

- 4 (about 150g each) Firm white fish fillets, barramundi, basa, snapper or hoki; skinless
- 2 tbsp Plain flour
- Salt and black pepper
- 1 tbsp Olive oil
- 50g Butter
- 3 cloves Garlic, finely chopped
- 1 Lemon, half juiced, half cut into wedges
- 2 tbsp Parsley, chopped
- 300g Green beans, trimmed, to serve

Method
Boil or steam the green beans for 4–5 minutes until just tender. Drain and keep warm.
Pat the fish dry with paper towel. Season both sides, then dust lightly with the flour.
Heat the oil in a large frying pan over medium-high heat. Cook the fish for 3 minutes, turn, and cook 2–3 minutes more until golden.
Reduce the heat to medium. Add the butter and garlic and spoon the foaming butter over the fish for 1 minute, taking care not to burn the garlic.
The fish is cooked when it is opaque all the way through and flakes easily with a fork. Add the lemon juice and parsley, and serve with the beans and lemon wedges.
Storage
Best eaten fresh. Fridge up to 1 day in a sealed container; reheat gently until piping hot all the way through. Not suitable for freezing once cooked.
