Ingredients
- 16 pieces Ready-made falafel, frozen or chilled supermarket falafel
- 4 Large wraps
- 1/2 cup Hummus
- 1 Lebanese cucumber, thinly sliced
- 2 medium Tomatoes, sliced
- 2 cups (60g) Baby spinach
- 1/2 cup Plain yoghurt
- 1 tbsp Lemon juice
You’ll need: Baking tray, Baking paper
Method
Heat the oven to 200°C (180°C fan). Bake the falafel on a lined tray for 12–15 minutes, turning once, until crisp and piping hot all the way through. If your packet gives different times, follow the packet.
Meanwhile, stir the yoghurt and lemon juice together.
Spread each wrap with hummus, then add the spinach, cucumber, tomato and falafel. Spoon over the yoghurt.
Fold in the ends, roll up tightly, cut in half and serve.
Storage
Best assembled fresh. Keep cooked falafel covered in the fridge up to 2 days and reheat until piping hot.
