- 1 large (about 250g) Chicken breast, cut into small 1cm pieces
- 1 tbsp Vegetable oil
- 1 tsp Ground cumin
- 1 tsp Smoked paprika
- 4 Large flour tortillas
- 150g Cheddar cheese, grated
- 3 Spring onions, sliced
- 1/4 tsp Salt
You’ll need: Large frying pan
Method
Toss the chicken with the cumin, paprika and salt.
Heat the oil in a large frying pan over medium-high heat. Cook the chicken for 6–7 minutes, stirring, until golden and cooked through with no pink inside. Tip it into a bowl and wipe out the pan.
Lay out the tortillas. Sprinkle cheese over one half of each, then add the chicken and spring onions, and fold over to make half-moons.
Return the pan to medium heat. Cook the quesadillas two at a time for 2–3 minutes on each side, until golden and the cheese has melted.
Cut each into wedges and serve hot.
Storage
Best eaten fresh. Leftovers keep in the fridge for 1 day; reheat until piping hot all the way through.
