Breakfast Tray Bake
Sausages, bacon, mushrooms and tomatoes roasted on one tray, finished with baked eggs.

- 8 Pork sausages
- 4 Bacon rashers, halved
- 250g Button mushrooms, halved
- 250g Cherry tomatoes
- 6 Eggs
- 1 tbsp Olive oil
- Salt and black pepper
You’ll need: Large baking tray
Method
Heat the oven to 200°C (180°C fan). Put the sausages on a large tray, drizzle with the oil and roast for 12 minutes, turning once.
Add the bacon, mushrooms and tomatoes and roast for 10 minutes, until the sausages are browned.
Make 6 small gaps among the ingredients and crack an egg into each. Season the eggs with salt and pepper.
Bake for 8–10 minutes, until the whites are fully set. The yolks stay soft at 8 minutes and are firm at 10. The sausages should be cooked through with no pink inside and the bacon cooked through.
Serve with toast (not included).
Storage
Best eaten straight away. Bake until yolks are firm for young children, pregnant women, older people or anyone unwell. Refrigerate leftovers within 2 hours and eat within 1 day. Reheat until piping hot all the way through.
