Air Fryer Roast Potatoes

Ingredients
- 1kg Potatoes, peeled, cut into 4–5cm chunks
- 1 tsp, plus a pinch for the water Salt
- 2 tbsp Olive oil
- 1 sprig Fresh rosemary, leaves chopped, optional
You’ll need: Air fryer
Method
Put the potatoes in a large saucepan, cover with cold water, add a pinch of salt and bring to the boil. Simmer for 8 minutes, until the edges are just soft but they still hold their shape.
Drain well and leave in the colander for 3 minutes to steam dry. Shake the colander firmly a few times to rough up the edges. Those rough edges become the crunch.
Toss the potatoes with the oil, 1 tsp salt and the rosemary, if using.
Heat the air fryer to 200°C. Cook in 2 batches if the basket would be more than half full. Cook for 25–30 minutes, shaking every 8–10 minutes, until deep golden and crisp. Check toward the early end.
Serve straight away with your roast.
Storage
Best eaten fresh. Fridge up to 2 days; re-crisp in the air fryer at 200°C for 5 minutes.
