Patti LaBelle’s Chicken & Dumpling Recipe

• 2 large onions, chopped
• 4 cloves of garlic, minced
• 2 stalks of celery, chopped
• 2 carrots, peeled and chopped
• 1 teaspoon of dried thyme
• 1/2 teaspoon of smoked paprika
• 4 tablespoons of all-purpose flour
• 4 cups of chicken broth
• 3 pounds of boneless, skinless chicken thighs
• 8 ounces of frozen peas
• 2 teaspoons of Worcestershire sauce
• For the dumplings:
• 2 cups of all-purpose flour
• 2 teaspoons of baking powder
• 1 teaspoon of garlic powder
• 2 tablespoons of fresh parsley, chopped
• 1/4 teaspoon of sea salt
• 1/4 cup of extra-virgin olive oil
• 1 cup of low-fat buttermilk

Method:

1. Preheat a large stock pot over medium high heat and add the oil.
2. Sauté the onions and garlic until they are golden, about 4 minutes.
3. Add the celery and carrots to the pot and cook until they’re softened, about 5 additional minutes.
4. Add the thyme, paprika, and flour, and cook for 2 minutes, stirring constantly.
5. Pour in the chicken broth and stir until well combined.
6. Add the chicken thighs and bring the mixture to a simmer.
7. Cook for 25 minutes, stirring occasionally.
8. Add the Worcestershire sauce, and frozen peas, stir, and cook for an additional 5 minutes.
9. Meanwhile, make the dumpling dough by whisking together the flour, baking powder, garlic powder, and salt in a bowl.
10. In a smaller bowl, stir together the oil and buttermilk.
11. Pour the wet ingredients into the dry ingredients and stir until a sticky dough forms.
12. Drop a tablespoon of the dumpling dough directly into the simmering stew.
13. Cook for 10 minutes until the dumplings are cooked through.
14. Serve the Chicken and Dumplings with fresh parsley and a sprinkle of smoked paprika.
