- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breast and cook until golden brown, about 5-7 minutes.
- Reduce the heat to medium-low, then add the mustard-honey mix to the skillet and cook, stirring frequently, until the sauce is reduced and the chicken is cooked through (3-4 mins).
- Add the roasted cashews and stir until gently toasted. Serve hot with extra roasted cashews for garnish.
