Mexican Pozole

  • 1 lb pork or chicken
  • 2 cans of hominy

  • 1 can diced tomatoes
  • 1 jalapeno, diced

Instructions:

  3. Add pork or chicken and oregano and cook for 5 minutes or until lightly browned.
  4. Add hominy, chicken stock, and tomatoes and bring to a boil.
  5. Reduce heat to low and let simmer for 30 minutes.
  6. Stir in jalapeno and cook for an additional 15 minutes.
  7. Serve with limes, cilantro, radishes, and avocado for garnish, if desired.
