Spiced Indian Samosas

Samosas are the perfect finger food to serve before dinner or at any party. Enjoy this traditional Indian favorite with a savory filling and a flaky crunchy crust.

Ingredients

  • 1/3 cup vegetable oil
  • 2 potatoes, thinly sliced
  • 2 cloves of garlic, finely minced
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon chili powder
  • Salt, to taste
  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh ginger, minced
  • 1 onion, chopped
  • 1/4 cup fresh peas
  • 1/4 cup raisins
  • 1/4 cup toasted cashews
  • 2 tablespoons fresh coriander, chopped
  • 1/4 teaspoon garam masala
  • 1 package (10 sheets) ready-made samosa pastry

Instructions

  • Preheat the oven to 375°F.
  • In a skillet, heat the vegetable oil.
  • Add the potatoes and fry until golden, about 5 minutes.
  • Add the garlic, coriander, cumin, turmeric, chili powder, and salt.
  • Stir to evenly coat the potatoes and cook for 1 minute.
  • Remove from heat and set aside.
  • In a separate skillet, heat 2 tablespoons of vegetable oil.
  • Add the ginger, onions and peas and cook for about 2 minutes.
  • Add the raisins, toasted cashews and the cooked potatoes.
  • Stir in the coriander and garam masala and cook until heated through, about 3 minutes.
  • Remove from heat and set aside to cool.
  • Lay the samosa pastry sheets on a clean surface.
  • Cut each sheet in half lengthwise.
  • Roll each half into a log.
  • Cut each log into four equal pieces.
  • Take each piece and shape into a triangle.
  • Place 1 teaspoon of the filling onto the center of the triangle.
  • Fold the edges over the filling and press to seal.
  • Place the samosas on a baking sheet lined with parchment paper.
  • Brush the samosas lightly with oil and bake for 15 minutes, or until golden.
  • Serve hot with your favorite sauce.
