Spiced Indian Samosas
Samosas are the perfect finger food to serve before dinner or at any party. Enjoy this traditional Indian favorite with a savory filling and a flaky crunchy crust.
Ingredients
- 1/3 cup vegetable oil
- 2 potatoes, thinly sliced
- 2 cloves of garlic, finely minced
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon chili powder
- Salt, to taste
- 2 tablespoons vegetable oil
- 1 tablespoon fresh ginger, minced
- 1 onion, chopped
- 1/4 cup fresh peas
- 1/4 cup raisins
- 1/4 cup toasted cashews
- 2 tablespoons fresh coriander, chopped
- 1/4 teaspoon garam masala
- 1 package (10 sheets) ready-made samosa pastry
Instructions
- Preheat the oven to 375°F.
- In a skillet, heat the vegetable oil.
- Add the potatoes and fry until golden, about 5 minutes.
- Add the garlic, coriander, cumin, turmeric, chili powder, and salt.
- Stir to evenly coat the potatoes and cook for 1 minute.
- Remove from heat and set aside.
- In a separate skillet, heat 2 tablespoons of vegetable oil.
- Add the ginger, onions and peas and cook for about 2 minutes.
- Add the raisins, toasted cashews and the cooked potatoes.
- Stir in the coriander and garam masala and cook until heated through, about 3 minutes.
- Remove from heat and set aside to cool.
- Lay the samosa pastry sheets on a clean surface.
- Cut each sheet in half lengthwise.
- Roll each half into a log.
- Cut each log into four equal pieces.
- Take each piece and shape into a triangle.
- Place 1 teaspoon of the filling onto the center of the triangle.
- Fold the edges over the filling and press to seal.
- Place the samosas on a baking sheet lined with parchment paper.
- Brush the samosas lightly with oil and bake for 15 minutes, or until golden.
- Serve hot with your favorite sauce.
