Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 cake pan.
  2. In the bowl of an electric mixer, beat together the sugar and the oil until creamy. Beat in the eggs and the vanilla extract.
  3. Mix in the flour, baking soda, baking powder, cinnamon and salt until incorporated, scraping down the sides of the bowl as necessary.
  4. Stir in the pineapple with juice, pecans, mashed bananas and coconut (if using).
  5. Spread the batter into the prepared cake pan. Bake for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Let the cake cool completely before frosting.
