– 600g of chicken thigh cubes
– 3 tablespoons of vegetable oil
– 1 onion
– 4 cloves of garlic, minced

– 2 stalks of lemongrass, crushed
– 2 red chillies, sliced
– 2 tablespoons of Tamarind paste
– 2 teaspoons of palm sugar
– 1/4 teaspoon of salt
– 5 tablespoons of coconut cream


1. Heat the oil in a large saucepan over medium-high heat. Add the chicken thighs and cook till they are lightly browned.

2. Add the onion and garlic, and cook until the onion is translucent.

3. Add the turmeric, ginger, lemongrass, chilli powder, tamarind paste, and palm sugar. Stir well to combine.

4. Turn the heat down and add the coconut cream. Simmer for 10 minutes, stirring occasionally.

5. Add the salt, to taste. Cook for an additional 5 minutes until the sauce has thickened and the chicken is cooked through.

6. Serve over steamed jasmine rice. Enjoy!
