Greek Patatato Pitsa Recipe

Ingredients

  • 1 large or 2 small potatoes (cooked and mashed)
  • 1 cup cooked spinach (drained)
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon Greek oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon extra virgin olive oil
  • 1 package store-bought of refrigerated pizza dough
  • 1/4 cup Greek olives, pitted and sliced

Instructions

  1. Preheat oven to 400°F. Lightly grease a blending bowl and set aside.
  2. In the greased bowl, mix together mashed potatoes, spinach, feta cheese, Parmesan cheese, mozzarella cheese, garlic, Greek oregano, salt, pepper, and olive oil. Mix until everything is well-combined.
  3. Roll the pizza dough out into a large circle and transfer onto a baking sheet. Top the dough with the potato mixture and spread evenly on top.
  4. Bake pizza in preheated oven for 20 to 25 minutes, or until the edges are golden brown.
  5. Remove from oven and top with Greek olives. Let pizza cool for 5 minutes before slicing and serving. Enjoy!
