Greek Patatato Pitsa Recipe
Ingredients
- 1 large or 2 small potatoes (cooked and mashed)
- 1 cup cooked spinach (drained)
- 1/2 cup feta cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon Greek oregano
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon extra virgin olive oil
- 1 package store-bought of refrigerated pizza dough
- 1/4 cup Greek olives, pitted and sliced
Instructions
- Preheat oven to 400°F. Lightly grease a blending bowl and set aside.
- In the greased bowl, mix together mashed potatoes, spinach, feta cheese, Parmesan cheese, mozzarella cheese, garlic, Greek oregano, salt, pepper, and olive oil. Mix until everything is well-combined.
- Roll the pizza dough out into a large circle and transfer onto a baking sheet. Top the dough with the potato mixture and spread evenly on top.
- Bake pizza in preheated oven for 20 to 25 minutes, or until the edges are golden brown.
- Remove from oven and top with Greek olives. Let pizza cool for 5 minutes before slicing and serving. Enjoy!
