General Tso’s Chicken

-1/4 teaspoon red pepper flakes
-2 tablespoons vegetable oil

Directions:

1. Begin by preparing your chicken. In a medium bowl, combine the egg, cornstarch, salt and pepper and whisk until smooth. Add the chicken pieces, stirring until they are well-coated.

2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces, in batches, and cook until golden brown. Remove the chicken from the skillet and set aside.

3. In a medium mixing bowl, combine all the sauce ingredients.

4. To the same skillet, add the 2 tablespoons of vegetable oil and heat until it begins to shimmer. Add the garlic and ginger and stir until fragrant and just beginning to brown.

5. Add the sauce to the skillet and bring to a boil.

6. Add the chicken back to the pan and spoon the sauce over it. Bring to a boil, reduce the heat to low, and simmer for 3-4 minutes or until the sauce thickens and coats the chicken.

7. Serve over steamed rice and enjoy!
