Easy Overnight Oats

Plus, if your family have different dietary preferences, this is a great option as it can easily be adapted to your needs.
- ½ cup oats
- 1 cup almond or other plant-based milk
- 1 banana, mashed
- 1 teaspoon chia seeds
- A pinch of cinnamon
- Combine all the ingredients in a bowl and mix them together until combined.
- Pour the mixture into a jar or container, cover and leave to chill in the fridge overnight.
- In the morning, top your oats with your favourite toppings and enjoy!
Spinach & Mushroom Omelette
This simple omelette is a great option for a quick and easy breakfast for the whole family. Packed with protein and veggies, it’s also a great way to sneak some extra nutrition into an otherwise regular meal.
- 2 eggs
- ½ cup spinach, chopped
- 4 mushrooms, sliced
- 2 tablespoons olive oil
- salt and pepper, to taste
- Heat a small non-stick pan over medium heat and add the olive oil.
- Add the spinach and mushrooms and cook until they are tender.
- Beat the eggs and pour them into the pan.
- Cook until the eggs are cooked through.
- Fold the omelette in half and serve!
No time for breakfast in the morning? A smoothie is the perfect solution – easy to make, full of nutrition, and delicious! Plus, this one only takes a few minutes to whip up, making it perfect for busy mornings.
- 1 banana
- 1/2 cup almond or other plant-based milk
- 1 tablespoon peanut butter
- 1 tablespoon honey (optional)
- Peel and chop the banana.
- Add the banana, milk, peanut butter, and honey (if using) to a blender and blend until smooth.
- Serve and enjoy!
