Ingredients

-1 large red bell pepper, cut into strips
-1 small yellow onion, cut into strips
-2 tablespoons hot sauce
-2 tablespoons apple cider vinegar
Method
1. Preheat oven to 375°F.
2. In a medium bowl, combine olive oil, salt, pepper, garlic powder, and paprika; whisk to combine.
3. Add chicken breasts to the bowl with the oil, and toss to coat.
4. Lay chicken in a single layer in a 9×13-inch baking dish, and bake for 25 minutes.
5. Meanwhile, in a large bowl, combine bell pepper, onion, hot sauce, and cider vinegar.
6. Once the chicken has finished baking, remove from the oven, and top with the bell pepper and onion mixture.
7. Bake for an additional 10 minutes, or until vegetables are tender.
8. Serve hot over cooked rice or in a wrap.
Additional Tips
For a bit of a richer flavor, try adding a few tablespoons of honey or brown sugar to the mixture before baking. You can also switch up the vegetables used with whatever is in season. For example, you could substitute bell peppers with eggplant, squash, or mushrooms.
