AIP Chicken Recipe

-2 lb. Chicken Breasts
-2 Tbsp. Coconut Oil
-½ Cup White Onion, diced
-1 Red Bell Pepper, julienned
-½ Cup Pineapple, diced
-2 Tbsp. Coconut Aminos
-1 Tbsp. Fresh Ginger, minced
-1 tsp Sea Salt


1. Preheat oven to 425°F.

2. Heat coconut oil in an oven-safe skillet or roasting pan over medium-high heat.

3. Add chicken to the pan and cook for 5 minutes.

4. Flip chicken and add onion, bell pepper, and pineapple to the pan.

5. Add coconut aminos, ginger, and salt. Stir to combine.

6. Place skillet in preheated oven and cook for 20 minutes or until chicken is cooked through and vegetables are tender.

7. Serve warm. Enjoy!
