Tomato Basil Pasta

Ingredients
- 300g Spaghetti or penne
- 2 tbsp Olive oil
- 3 cloves Garlic, sliced
- 2 x 400g tins Chopped tomatoes
- 1 tsp Sugar
- small bunch Fresh basil, leaves torn
- to serve, optional Parmesan
- Salt and black pepper
You’ll need: Large saucepan, Frying pan
Method
Cook the pasta in salted boiling water according to the packet instructions. Save a mug of pasta water, then drain.
Meanwhile, heat the oil in a frying pan over medium heat. Cook the garlic for 1 minute until fragrant.
Add the tomatoes and sugar. Simmer for 12–15 minutes, stirring now and then, until thickened. Season to taste.
Toss the pasta through the sauce with a splash of pasta water. Stir in most of the basil and serve topped with the rest and parmesan.
Storage
Fridge up to 3 days. Reheat until piping hot.
