Ingredients
- 300g Tagliatelle or penne
- 25g Butter
- 1 tbsp Olive oil
- 400g Mushrooms, sliced
- 2 cloves Garlic, finely chopped
- 200ml Double cream
- 40g Parmesan, finely grated
- small handful Parsley, chopped, optional
- Salt and black pepper
You’ll need: Large saucepan, Large frying pan
Method
Cook the pasta in salted boiling water according to the packet instructions. Save a mug of pasta water, then drain.
Meanwhile, heat the butter and oil in a large frying pan over medium-high heat. Cook the mushrooms for 6–8 minutes, without stirring too often, until golden.
Add the garlic and cook for 1 minute. Pour in the cream and simmer for 3 minutes.
Stir in the parmesan, then toss through the pasta, adding pasta water to loosen. Season and top with parsley.
Storage
Fridge up to 2 days. Reheat gently until piping hot.
