Ingredients
- 300g Penne or farfalle
- 2 tbsp Olive oil
- 1 Courgette, halved lengthways and sliced
- 1 Red pepper, sliced
- 2 cloves Garlic, finely chopped
- 100g Frozen peas
- 150g Cherry tomatoes, halved
- 100ml Double cream or crème fraîche
- 40g Parmesan, finely grated
- 1/2 Lemon, juiced
- Salt and black pepper
You’ll need: Large saucepan, Large frying pan
Method
Cook the pasta in salted boiling water according to the packet instructions, adding the peas for the last 2 minutes. Save a mug of pasta water, then drain.
Meanwhile, heat the oil in a large frying pan over medium-high heat. Cook the courgette and pepper for 6–7 minutes until just tender. Add the garlic and tomatoes for 2 minutes.
Stir in the cream, parmesan and lemon juice, then add the pasta and peas. Toss, loosening with pasta water. Season and serve.
Storage
Fridge up to 2 days. Reheat until piping hot.
