Garlic Butter Prawns
Prawns sizzled in garlicky chilli butter with lemon and parsley, with crusty bread to mop up the sauce.

- 500g Raw prawns, peeled and deveined, tails left on
- 60g Butter
- 1 tbsp Olive oil
- 4 cloves Garlic, finely chopped
- 1/4 tsp Chilli flakes
- 1 Lemon, half juiced, half cut into wedges
- 2 tbsp Parsley, chopped
- 1 loaf Crusty bread, warmed, to serve

You’ll need: Large frying pan
Method
Pat the prawns dry and season with a pinch of salt.
Heat the oil and half the butter in a large frying pan over medium-high heat. Add the prawns in a single layer and cook for 1–2 minutes each side until pink and curled.
Reduce the heat to low. Add the remaining butter, garlic and chilli flakes and stir for 30–60 seconds until fragrant. Do not let the garlic brown.
Take off the heat and stir in the lemon juice and parsley. Serve straight from the pan with the bread and lemon wedges.
Storage
Best eaten fresh. Fridge up to 1 day in a sealed container; reheat gently and briefly until piping hot, as prawns turn rubbery when overcooked.
