Easy Vegetable Stir-Fry

Ingredients
- 200g Long-grain rice, to serve
- 1 tbsp Vegetable oil
- 2 Carrots, thinly sliced on an angle
- 1 head Broccoli, cut into small florets
- 1 Red capsicum, sliced
- 150g Snow peas, trimmed
- 2 cloves Garlic, finely chopped
- 1 tbsp Fresh ginger, grated
- 3 tbsp Soy sauce
- 1 tbsp Honey
- 1 tsp Cornflour
- 3 tbsp Water
You’ll need: Large frying pan or wok, Medium saucepan
Method
Cook the rice according to the packet instructions.
Stir the soy sauce, honey, cornflour and water together in a small bowl.
Heat the oil in a large frying pan or wok over high heat. Add the carrots and broccoli and stir-fry for 3 minutes.
Add the capsicum and snow peas and stir-fry for 2 minutes more, until the vegetables are bright and just tender.
Add the garlic and ginger and cook for 30 seconds. Stir the sauce again, pour it in and toss for 1 minute until glossy and slightly thickened. Serve over the rice.
Storage
Keeps in the fridge up to 2 days. Cool rice quickly and chill within 1 hour. Reheat until piping hot all the way through.
