Ingredients
- 1 tbsp Olive oil
- 1 Onion, chopped
- 2 Carrots, diced
- 2 sticks Celery, diced
- 2 cloves Garlic, finely chopped
- 1 large Potato, peeled, cut into 1.5cm cubes
- 1 x 400g tin Chopped tomatoes
- 1 litre Vegetable stock, hot
- 1 tsp Dried mixed herbs
- 100g Frozen peas
- Salt and black pepper

Method
Heat the oil in a large saucepan over medium heat. Cook the onion, carrots and celery for 6–7 minutes until starting to soften. Add the garlic and cook for 1 minute.
Add the potato, tomatoes, stock and herbs. Bring to a boil, then reduce the heat and simmer, partly covered, for 15 minutes until the vegetables are tender.
Add the peas and cook for 3 minutes. Season to taste. For a thicker soup, mash a few potato pieces against the side of the pan.
Serve hot with bread.
Storage
Cool quickly and keep in the fridge up to 3 days, or freeze for up to 3 months. Reheat until piping hot all the way through.
