- 2 tbsp Olive oil
- 1 Onion, diced
- 2 Carrots, diced
- 3 cloves Garlic, crushed
- 2 tsp Ground cumin
- 1 cup (200g) Red lentils, rinsed
- 5 cups Vegetable stock
- 1 tbsp Lemon juice
- Salt and pepper, to taste
You’ll need: Large saucepan
Method
Heat the oil in a large saucepan over medium heat. Cook the onion and carrots for 6 minutes, then add the garlic and cumin and cook for 1 minute.
Add the lentils and stock. Bring to the boil, then reduce the heat and simmer, partly covered, for 20–25 minutes, stirring occasionally, until the lentils are soft and the soup has thickened.
Stir in the lemon juice and season with salt and pepper. For a smoother soup, blend part of it with a stick blender.
Storage
Keeps in the fridge up to 3 days. It thickens, so add a splash of water when reheating until piping hot. Freezes up to 3 months.
