Easy Tuna Patties

Ingredients
- 400g Potatoes, peeled and cut into chunks
- 2 x 185g tins Tinned tuna, drained well
- 1 Egg
- 3 Spring onions, finely sliced
- 1 Lemon, zest and juice, plus extra wedges
- 1 cup Breadcrumbs, divided
- 3 tbsp Vegetable oil
- Salt and black pepper

Method
Boil the potatoes in salted water for 12–15 minutes until soft. Drain well and mash until smooth. Let it cool for 5 minutes.
Mix the potato with the tuna, egg, spring onions, lemon zest and juice, 1/2 cup of the breadcrumbs and a good pinch of salt and pepper.
Shape into 8 patties and press into the remaining breadcrumbs to coat. Chill for 10 minutes if you have time, which helps them hold together.
Heat half the oil in a large frying pan over medium heat. Cook 4 patties for 3–4 minutes each side until golden and hot in the centre. Repeat with the remaining oil and patties.
Serve with lemon wedges.
Storage
Fridge up to 2 days in a sealed container. Reheat in a frying pan or oven until piping hot all the way through. Freezing not recommended.
