Easy Sweet Potato Hash
Crisp-edged sweet potato, onion and capsicum cooked in one pan and topped with baked-in eggs.

Ingredients
- 2 large (about 700g) Sweet potatoes, peeled, cut into 1.5cm cubes
- 2 tbsp Olive oil
- 1 Onion, diced
- 1 Red capsicum, diced
- 2 cloves Garlic, finely chopped
- 1 tsp Smoked paprika
- 1/2 tsp Salt
- 4 Eggs
- 2 Spring onions, sliced, to serve
You’ll need: Large lidded frying pan
Method
Heat the oil in a large lidded frying pan over medium heat. Add the sweet potato and salt, cover and cook for 8 minutes, stirring twice.
Uncover and add the onion and capsicum. Cook for 8–10 minutes, stirring now and then, until the sweet potato is tender and golden at the edges.
Stir in the garlic and paprika and cook for 1 minute.
Make four wells in the hash and crack an egg into each. Cover and cook for 4–5 minutes, until the whites are completely set. Cook a little longer if you prefer firm yolks.
Scatter over the spring onions and serve straight from the pan.
Storage
Keeps in the fridge up to 2 days (best without the eggs). Reheat until piping hot all the way through and use fresh eggs.
