Easy Self-Saucing Chocolate Pudding

- 1 cup (150g) Self-raising flour
- 1/2 cup (110g) Caster sugar
- 2 tbsp Cocoa powder, for the pudding
- 1/2 cup (125ml) Milk
- 60g Butter, melted
- 1 Egg, lightly beaten
- 1 tsp Vanilla extract
- 3/4 cup (150g) Brown sugar, for the sauce
- 2 tbsp Cocoa powder, for the sauce
- 1 1/2 cups (375ml) Boiling water
You’ll need: 2 litre (8 cup) baking dish
Method
Preheat the oven to 180°C (160°C fan). Grease a 2 litre (8 cup) baking dish.
Sift the flour, caster sugar and the first 2 tbsp cocoa into a bowl. Whisk the milk, butter, egg and vanilla together, pour into the dry ingredients and stir until smooth. Spoon into the dish.
Mix the brown sugar and remaining cocoa and sprinkle evenly over the batter.
Pour the boiling water slowly over the back of a spoon onto the mixture. Don't stir.
Bake for 35 minutes, until the sponge is firm to the touch and the sauce bubbles around the edges.
Stand for 5 minutes, then spoon into bowls with sauce from the bottom. The pudding and sauce are very hot.
Storage
Best eaten straight away. Leftovers keep covered in the fridge up to 2 days; reheat until hot.
