Ingredients
- 1/2 cup (100g) Short-grain rice, such as arborio or pudding rice
- 3 cups (750ml) Full-cream milk
- 1/4 cup (55g) Caster sugar
- 1 tsp Vanilla extract
You’ll need: Medium saucepan
Method
Put the rice, milk and sugar in a medium saucepan over medium heat. Stir until the sugar dissolves and the milk is just steaming.
Reduce to low and simmer gently for 35 minutes, uncovered, stirring every few minutes (and often towards the end) so the rice doesn't stick or catch on the base. It's ready when the rice is tender and the pudding is thick and creamy.
Take off the heat and stir in the vanilla. Stand for 5 minutes; it thickens as it sits.
Serve warm, dusted with ground cinnamon or topped with jam or stewed fruit.
Storage
Cool quickly and refrigerate within 1 hour. Keep covered and eat within 1 day. Reheat once, adding a splash of milk, until steaming hot all the way through.
