Easy Prawn Stir-Fry

- 250g Long-grain or jasmine rice
- 500g Raw prawns, peeled and deveined
- 2 tbsp Vegetable oil
- 3 cloves Garlic, finely chopped
- 1 tbsp Ginger, finely grated
- 1 Red capsicum, sliced
- 1 bunch Broccolini, cut into short lengths
- 3 tbsp Sweet chilli sauce
- 1 tbsp Soy sauce
- 1 Lime, juiced
You’ll need: Large frying pan or wok, Saucepan
Method
Cook the rice according to the packet instructions.
Mix the sweet chilli sauce, soy sauce and lime juice in a small bowl.
Heat 1 tbsp oil in a large frying pan or wok over high heat. Stir-fry the capsicum and broccolini with a splash of water for 3–4 minutes until just tender. Remove to a plate.
Add the remaining oil, garlic and ginger and stir for 20 seconds. Add the prawns and cook for 2–3 minutes, turning, until pink and curled into a loose C shape.
Return the vegetables, pour in the sauce and toss for 1 minute until glossy. Serve over the rice.
Storage
Fridge up to 1 day. Cool leftover rice quickly and refrigerate within 1 hour. Reheat quickly until piping hot all the way through; reheated prawns can turn rubbery.
