Easy Oven Potato Wedges
Thick, skin-on wedges with smoky paprika, baked until crisp outside and soft inside.

Ingredients
- 800g Potatoes, about 4 medium, unpeeled, scrubbed
- 2 tbsp Olive oil
- 1 tsp Smoked paprika
- 1 tsp Salt
You’ll need: 2 baking trays
Method
Heat the oven to 200°C fan (220°C conventional). Line 2 baking trays with baking paper.
Cut each potato in half lengthways, then cut each half into 3–4 thick wedges.
Toss the wedges in a large bowl with the oil, paprika and salt until evenly coated.
Spread over the trays, skin side down, in a single layer with space between. Crowded wedges steam instead of crisping.
Bake for 35–40 minutes, turning once halfway, until golden and crisp at the edges and a knife slides into the thickest part easily.
Storage
Best eaten fresh. Fridge up to 2 days; re-crisp in a hot oven for 10 minutes.
