Ingredients
- 2 Eggs
- 1 tbsp Butter or oil
- 1 pinch Salt
- Black pepper, to taste
You’ll need: Non-stick frying pan
Method
Heat the butter or oil in a non-stick frying pan over medium heat until it foams or shimmers.
Crack each egg into a cup first, then slide it into the pan. Cook for 2 minutes until the whites are set and the edges are crisp.
For a runny yolk, spoon a little hot fat over the top and cook 1 minute more, making sure the whites are fully set. For a firm yolk, flip the eggs and cook 1 minute, or cover the pan for 2 minutes.
Season and serve straight away.
Storage
Best eaten straight away. Cook yolks firm for young children, pregnant women, older people or anyone unwell. Refrigerate leftovers within 2 hours and eat within 1 day. Reheat until piping hot all the way through.
