- 125g Butter, chopped
- 150g Dark chocolate, broken into pieces
- 3/4 cup (165g) Caster sugar
- 3 Eggs, lightly beaten
- 3/4 cup (110g) Plain flour
- 1/4 cup (25g) Cocoa powder
You’ll need: 20cm square tin, Medium saucepan, Baking paper
Method
Preheat the oven to 180°C (160°C fan). Grease a 20cm square tin and line the base and sides with baking paper.
Melt the butter and chocolate in a medium saucepan over low heat, stirring, until smooth. Take off the heat and cool for 5 minutes.
Stir in the sugar, then the eggs until combined. Sift in the flour and cocoa and stir until just smooth.
Pour into the tin and smooth the top. Bake for 25 minutes, until the edges are set and the centre has a slight wobble and a skewer comes out with a few moist crumbs.
Cool in the tin for at least 30 minutes, then lift out with the paper and cut into 16 squares. The batter contains raw egg and flour, so don't taste it before baking.
Storage
Keeps in an airtight container at room temperature up to 4 days. Freeze squares up to 3 months.
