- 125g Butter, softened
- 3/4 cup (150g) Brown sugar, firmly packed
- 1 Egg
- 1 tsp Vanilla extract
- 1 1/2 cups (225g) Plain flour
- 1/2 tsp Bicarbonate of soda
- 150g Dark choc chips
You’ll need: 2 large baking trays, Baking paper, Large bowl
Method
Preheat the oven to 180°C (160°C fan). Line 2 large baking trays with baking paper.
Beat the butter and sugar in a large bowl with a wooden spoon or electric beaters until creamy. Beat in the egg and vanilla.
Stir in the flour and bicarbonate of soda until a soft dough forms, then stir through the choc chips.
Roll tablespoons of dough into balls and place on the trays 5cm apart, flattening slightly. You should get about 20.
Bake one tray at a time for 10–12 minutes, until golden around the edges but still soft in the middle. Cool on the tray for 5 minutes (they firm up as they cool), then move to a wire rack. Don't eat the raw dough, as it contains raw egg and flour.
Storage
Keeps in an airtight container at room temperature up to 4 days. Freeze the dough balls up to 3 months and bake from frozen, adding 2 minutes.
