Ingredients
- 300g Penne or fettuccine
- 200g Smoked bacon, chopped
- 2 cloves Garlic, finely chopped
- 250ml Double cream
- 50g Parmesan, finely grated, plus extra to serve
- small handful Parsley, chopped, optional
- Black pepper
You’ll need: Large saucepan, Large frying pan
Method
Cook the pasta in salted boiling water according to the packet instructions. Save a mug of pasta water, then drain.
Meanwhile, fry the bacon in a large dry frying pan over medium-high heat for 6–8 minutes until crisp and cooked through. Add the garlic for the last minute.
Pour in the cream and simmer for 2–3 minutes. Stir in the parmesan until melted.
Toss through the pasta with a splash of pasta water. Season with pepper (no extra salt needed) and top with parsley.
Storage
Fridge up to 2 days. Reheat gently until piping hot all the way through.
