Vanilla Whoopie Pie Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, at room temperature
  • 1¼ cups packed light-brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk
  • ½ cup vegetable shortening
  • 2 cups sifted powdered sugar
  • 1 teaspoon pure vanilla extract
  • 3 – 4 tablespoons whole milk

Directions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper; set aside.

    In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.

    In the bowl of an electric mixer fitted with the paddle attachment, beat butter and brown sugar until light and fluffy. Add the egg, and beat on low speed until combined. Beat in the vanilla and the flour mixture on low speed until just combined. Gradually beat in the buttermilk until just combined. Do not overmix.

    Drop batter onto prepared baking sheets, 1 heaping tablespoon for each cookie. Bake for 10 – 12 minutes, until cookies spring back when touched. Cool the cookies on a rack.

  2. To make the filling: In the bowl of an electric mixer fitted with the paddle attachment, beat shortening with powdered sugar until creamy. Beat in vanilla, then add milk and mix until light and fluffy.

  3. To assemble the whoopie pies: Place a generous teaspoon of the filling on the underside of one of the cookies. Top with a second cookie, pressing lightly to spread the filling. Repeat with remaining cookies.
