Vietnamese Banh Xeo

Vietnamese Banh Xeo is a delicious dish that originated in the Mekong Delta region of Southern Vietnam. It is a crepe-like pancake made from a rice flour and turmeric batter and is filled with various ingredients such as beef, pork, shrimp, and bean sprouts. The dish is traditionally served with lettuce leaves and a variety of fresh herbs and is a popular street-food dish in Vietnam.

Recipe Ingredients:

  • 2 cups of rice flour
  • 1 tablespoon of turmeric powder
  • 3 cups of water
  • 1/2 teaspoon of salt
  • 2 tablespoons of coconut oil
  • 1/2 pound of thinly sliced beef, pork or shrimp
  • 1 cup of bean sprouts
  • 1/2 cup of thinly sliced onions
  • Lettuce leaves (for serving)
  • Fresh herbs for garnish (mint, basil, cilantro, etc.)

Recipe Instructions:

  1. In a large bowl, mix together the rice flour, turmeric powder, salt and water until it forms a smooth batter. Set aside.
  2. Heat a large non-stick skillet or wok over medium-high heat and add 1 tablespoon of coconut oil and spread around.
  3. Pour 1/2 cup of the batter into the skillet and spread to form a thin crepe-like circle.
  4. Once the edges are cooked and lightly browned, add the beef, pork or shrimp to one side of the pancake and cook for 2 minutes until lightly browned.
  5. Add the onions and bean sprouts to the middle of the Banh Xeo and cook for 1-2 minutes. Then fold the one side of the pancake over the filling and turn off the heat.
  6. Remove the Banh Xeo from the skillet to a plate and repeat steps 2-5 with remaining batter and filling ingredients.
  7. Serve the Banh Xeo with lettuce leaves and fresh herbs for a delicious meal!
