VFW Chicken Recipe
Ingredients
- 1 onion diced
- 1 tbsp. garlic, minced
- 2 tsp. smoked paprika
- 1 tsp. cumin
- 1 tsp. oregano
- 1/2 tsp. salt
- 2 tbsp. olive oil
- 2 boneless, skinless chicken breasts, cut into bite sized pieces
- 1/4 cup white wine
- 2 cups chicken broth
- 2 cups cherry tomatoes
- 1 cup olives
- Fresh oregano for garnish
Directions
- In a bowl, mix together the onion, garlic, smoked paprika, cumin, oregano, salt and olive oil.
- Add the chicken to the bowl and toss to coat.
- Heat a large skillet over medium heat. Add the chicken to the skillet and cook for 7-10 minutes or until the chicken is no longer pink.
- Add the white wine and deglaze the pan, scraping up any browned bits.
- Add the chicken broth, cherry tomatoes and olives to the skillet and bring to a boil. Reduce the heat and simmer for 15 minutes.
