Vanilla Whoopie Pie Recipe

Whoopie Pies are a nostalgic classic and always a fan favorite. This creamy, soft and sweet vanilla-flavored treat is a must-have for any dessert occasion. Our Vanilla Whoopie Pies are sure to please, with their marshmallow-like center and creamy frosting.

Ingredients:

– 2 cups all-purpose flour
– 1 teaspoon baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1 cup vegetable shortening
– 1 ½ cups firmly packed light brown sugar
– 2 large eggs
– 1 teaspoon pure vanilla extract
– 1 cup buttermilk

Instructions:

1. Preheat oven to 350 degrees F. Grease two baking sheets and set aside.

2. In a bowl, sift together the flour, baking powder, baking soda, and salt; set aside.

3. In a separate bowl, cream vegetable shortening and brown sugar together until light and creamy.

4. Beat in the eggs one at a time, then stir in the vanilla.

5. Gradually add the dry ingredients, alternating with the buttermilk, and mix until all ingredients have been combined and a soft dough forms.

6. Drop dough by tablespoonfuls onto the prepared baking sheets, about 3 inches apart.

7. Bake for about 10-12 minutes, or until golden brown and springy to the touch.

8. Cool on the baking sheets for 10 minutes before transferring to wire rack to cool completely.

9. Frost cooled whoopie pies with Vanilla Whoopie Pie Filling (see below) to assemble.

Vanilla Whoopie Pie Filling Recipe

Ingredients:
– 4 tablespoons butter, softened
– 1 ½ cups powdered sugar
– 1 teaspoon pure vanilla extract
– ¼ teaspoon salt
– 1 cup marshmallow creme

Instructions:

1. With an electric mixer, beat the butter until smooth.

2. Gradually add the powdered sugar and continue to beat until creamy.

3. Add the vanilla and salt, and mix.

4. Add the marshmallow cream and beat until light and fluffy.

5. Spread mixture over half of the whoopie pies and top with remaining pies to assemble.
