Ultimate Ube Cheesecake Recipe

Ingredients:

  • 1 cup of graham cracker crumbs
  • ¼ cup of melted butter
  • 2 packages (8 oz. each) of cream cheese, softened
  • 1 cup of granulated sugar
  • 1 can (14 oz.) of sweetened condensed milk
  • ¼ cup of all-purpose-flour
  • 3 tablespoons of fresh lemon juice
  • 2 teaspoons of vanilla extract
  • 2 eggs
  • 2 tablespoons of ube halaya (ube jam)
  • dash of salt

Instructions:

  1. Preheat oven to 350 F. Grease eight (8) inch spring-form pan with butter or cooking spray. Set aside.
  2. In medium bowl, mix graham cracker crumbs and melted butter. Mix until completely blended. Press mixture into bottom and two-thirds up the sides of spring-form pan. Set aside.
  3. In a large bowl with electric mixer, beat cream cheese until creamy. Add sugar and beat until blended. Slowly beat in milk, flour, and lemon juice. Add vanilla, eggs, ube halaya and salt. Beat until completely blended. Pour mixture into prepared spring-form pan. Do not over-mix.
  4. Bake in preheated oven for 40 to 45 minutes or until top is lightly brown. You may have to add extra minutes if the middle of the cheesecake is not done. Let cool in pan for 10 minutes before removing. Let cool for 3 hours before serving.
