Tunisian Maakouda Recipe

-4-5 potatoes, peeled and cubed
-1/2 teaspoon cumin
-1/2 teaspoon paprika
-1/2 teaspoon garlic powder
-1/4 teaspoon cayenne pepper
-Oil, for frying


1. Bring a large pot of salted water to a boil.
2. Add the cubed potatoes and cook on medium-high heat until they are soft, about 10 minutes.
3. Drain the potatoes and mash them until they are creamy.
4. In a small bowl, mix together the cumin, paprika, garlic powder, and cayenne pepper.
5. Add the spice mix to the mashed potatoes and mix until combined.
6. Shape the potato mixture into small patties about the size of a golf ball.
7. Heat a large skillet on medium-high heat and add enough oil to cover the bottom of the pan.
8. Fry the patties in the hot oil until golden brown, about 5 minutes.
9. Remove the patties from the pan and place on a paper towel-lined plate to drain any excess oil.
