Thai Thai Omelette Recipe

It’s made with a combination of onion, garlic, chillies, and Thai spices, giving it a delicious, robust flavor.   • 2 tablespoons vegetable oil
  • 1/2 onion, finely diced
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, minced (optional)
  • 1 Thai bird or serrano chilli, finely diced
  • 2 teaspoons Thai red curry paste
  • Salt, to taste
  • 4 eggs, beaten
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced mushrooms
  • 1/4 cup chopped bell pepper
  • 1/4 cup shredded mozzarella cheese
  • Cilantro, to taste


  1. In a medium-sized skillet heat oil over medium-high heat. Add onion, garlic, ginger, chilli, and red curry paste. Cook for about 4 minutes, stirring frequently.
  2. Add salt to taste and eggs. Stir the eggs to combine with the onion mixture. Cook for about 2 minutes, or until eggs are almost set.
  3. Add diced tomatoes, mushrooms, bell pepper, and cheese. Stir everything together to combine. Cook for an another 2-3 minutes, or until eggs are cooked through.
  4. Garnish with cilantro and serve. Enjoy!
