Thai Thai Omelette Recipe

Ingredients
- 2 tablespoons vegetable oil
- 1/2 onion, finely diced
- 1 clove garlic, minced
- 1 teaspoon fresh ginger, minced (optional)
- 1 Thai bird or serrano chilli, finely diced
- 2 teaspoons Thai red curry paste
- Salt, to taste
- 4 eggs, beaten
- 1/4 cup diced tomatoes
- 1/4 cup sliced mushrooms
- 1/4 cup chopped bell pepper
- 1/4 cup shredded mozzarella cheese
- Cilantro, to taste
Instructions
- In a medium-sized skillet heat oil over medium-high heat. Add onion, garlic, ginger, chilli, and red curry paste. Cook for about 4 minutes, stirring frequently.
- Add salt to taste and eggs. Stir the eggs to combine with the onion mixture. Cook for about 2 minutes, or until eggs are almost set.
- Add diced tomatoes, mushrooms, bell pepper, and cheese. Stir everything together to combine. Cook for an another 2-3 minutes, or until eggs are cooked through.
- Garnish with cilantro and serve. Enjoy!
