Tantalising Thai Crispy Garlic Chicken

Ingredients:

– 1.5 kg boneless chicken, cut into equal sizes
– 10 slices of garlic, minced
– 2 tbsp coriander root, lightly pounded
– 3-4 fresh red chillis, sliced
– 2 tsp sea salt
– 2 tsp white pepper
– 2 tbsp light soy sauce
– 2 tbsp fish sauce
– 2 tbsp oyster sauce
– 2 tbsp brown sugar
– 2 tbsp lime juice
– 1 litre vegetable oil

Method:

1. In a large bowl, mix together the chicken, garlic, coriander root, chillis, salt, pepper, soy sauce, fish sauce, oyster sauce, sugar and lime juice until well mixed.
2. Heat the oil in a wok over medium-high heat.
3. Add the chicken to the wok, working in batches if necessary, and fry for about 8-10 minutes until golden and crispy.
4. Drain on a plate lined with kitchen paper and serve with rice or noodles.
