A Delicious Thai Basil Soup Recipe

Ingredients

– 2 tablespoons of vegetable oil
– 2 cloves of garlic, minced
– 2 tablespoons of freshly minced ginger root
– 1 red bell pepper, chopped
– 1 cup of mushrooms, sliced
– 1/2 cup of chicken broth
– 2 cups of coconut milk
– 2 tablespoons of fish sauce
– 1 tablespoon of sugar
– 1/4 cup of Thai basil leaves
– 2 tablespoons of lime juice

Method

1. Heat the oil in a large saucepan over medium heat.
2. Add the garlic and ginger and cook for 2 minutes, stirring occasionally.
3. Add the bell pepper and mushrooms, and cook for an additional 5 minutes.
4. Add the chicken broth, coconut milk, fish sauce, and sugar. Stir to combine, and bring to a simmer.
5. Add the Thai basil and lime juice, stirring gently.
6. Simmer for 10 minutes, or until the vegetables have softened.
7. Serve hot, garnished with additional Thai basil if desired.
