-5 potatoes, russet or red

-2 tablespoons olive oil
-1 teaspoon smoked paprika
-1 teaspoon dried thyme
-1 teaspoon garlic powder
-1/2 teaspoon black pepper
-1/4 teaspoon salt
-1/4 cup all-purpose flour
1. Preheat oven to 350ºF (176ºC). Peel, rinse and cube the potatoes.
2. Place the potatoes in a large pot and fill with enough cold water to cover them. Bring to a boil over high heat.
3. Once boiling, reduce heat to medium-low and simmer for 10-15 minutes, or until potatoes are fork tender. Drain and allow the potatoes to cool slightly.
4. Add the olive oil, garlic, smoked paprika, thyme, garlic powder, black pepper and salt to a bowl. Mix until combined.
5. In a large bowl, mash the potatoes with a potato masher or a fork.
6. Add the herb mixture to the potatoes and mix until combined.
7. Gradually add in the all-purpose flour, 1/4 cup at a time and mix until a dough forms.
8. Turn the dough out onto a lightly floured surface and knead for 1-2 minutes, or until a soft and pliable dough forms.
9. Shape the dough into a round loaf and place onto a parchment lined baking sheet.
10. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
11. Allow the tater bread to cool completely before slicing. Enjoy warm or at room temperature with butter, or use as a side to your favorite dish.
